Cricket Cuisine at Loyalist College

Entomo Farms’ Entomo Chef, Caryn Goldin and Food Technologist, Chris Bunn, were honoured to lead a Cricket Cuisine workshop at Loyalist College with a group of second year students. Chefs John Schneeberger, Karin Desveaux and Scott Royce, together with the second year students, whipped up delicious Cricket Pasta, Cricket Tea Biscuits and Chocolate Chip Cricket Cookies. The chefs were inspired and amazed by the versatility of the whole roasted crickets and the cricket powder, and were pleasantly surprised with the nutty taste of this ‘new’ ingredient.
