Following the rise of edible insects into mainstream has been absolutely incredible. The adoption over the past few years has been strong and steady. When celebrities embrace it and the entire concept and category, it helps to show  lay people that eating insects is really nothing to fear, yet something to behold, thanks to the great health benefits, the benefits to the environment, along with the fact that edible insects taste great- it’s just a matter of wrapping your head around it. So, imagine our glee when Stephen Colbert; actor, comedian, writer, producer and television host (and someone we admire tremendously) had Marcus Samuelsson, chef extraordinaire, as a guest on his late night show, cooking with cricket powder!
