I don’t know about you, but when I look out my window, summer seems like a faraway dream.
For goodness sake, over here in Toronto, Ontario, it hasn’t stopped snowing since early Saturday morning! Brrr!
I thought to myself, what better way to bring the summer to us than by making a sunny summer salad. Of course the recipe that I’m giving you is full of protein, calcium, iron, and the essential amino acids due to the cricket flour infused in the dressing, and the crunchy wax worms that are added as a topping.
I have posted this recipe before, but what makes this post unique, is that by clicking on the image above, you will be taken to a video showing you exactly how to make the dressing and the salad, step-by-step, by our own awesome Ento-Chef (A.K.A. Bug Chef) Caryn!
For those of you who have taken the plunge and bought cricket flour and are wondering how to use it in your day-to-day cooking, then look no further. Caryn shows you how to easily blend your cricket flour into your salad dressing to pack some protein and other goodies into your salads. For those of you who haven’t tried the flour, but are interested, this is your chance!
The crunchy, crispy wax worms serve as an awesome topping, especially if you are trying to stay away from stuff like croutons. The wax worms add an amazing crunch and light nutty flavor to the salad. If you’re looking to try some of the wax worms, you can get them through special order at Next Millennium Farms, just send your request to info@nextmillenniumfarms.com
