Turkey Cricket Meatballs

Thanks to our customer, Regina, for this mouth-watering recipe for Turkey Cricket Meatballs. Regina took her favourite meatball recipe and added the goodness of cricket powder (cricket flour). Serve over spaghetti squash, cauliflower rice, or pasta of your choice. The picture here, shows the Turkey Cricket Meatballs served over spaghetti squash!

Ingredients

1 lb turkey
1 egg
1 small onion diced
1 clove garlic
1/2 cup bread crumbs
4 Tbsp. (28 g) cricket powder (cricket flour)
1/4 c chopped parsley (you can also add a bit of dried oregano and or basil as you prefer)
1/2 c parmesan cheese (optional).
Tomato sauce (enough to cover meatballs- Regina used Newman’s Own Sockarooni)
salt & pepper to taste

Directions

To make the Turkey Cricket Meatballs, preheat the oven to 350 degrees. Mix all the ingredients (except tomato sauce) in large bowl.  Make into 1 inch to 1.5 inch balls. Heat non-stick skillet medium/medium high. Coat pan with olive oil. Brown all sides of the meatballs.  Don’t worry about cooking them fully. Place browned meatballs in baking pan – they should be crowded/double layered. Cover in tomato sauce. Layer with provolone cheese. Bake for 45 minutes or until everything is bubbling and the meatballs are fully cooked. Serve over spaghetti squash, cauliflower rice, or pasta of your choice.
