Spelt and Cricket Powder Zucchini Bread

Ingredients
3 eggs
½ cup vegetable oil
½ cup unsweetened apple sauce
½ cup honey
1 Tbsp molasses
1 tsp vanilla
2 cups grated zucchini, including peel
2 cups spelt flour
1 cup (100 g) cricket powder or ¼ cup (8 g) ground roasted crickets and ¾ cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cloves
1 tsp cinnamon
1 tsp nutmeg
¾ cup raisins
¾ cup chocolate chips
Directions
- Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
- Mix spelt flour, cricket powder, baking powder, soda, salt, cloves, cinnamon and nutmeg together in a bowl.
- Beat eggs, oil, apple sauce, honey, molasses, vanilla and zucchini together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in raisins and chocolate chips until well combined. Pour batter into prepared pans.
- Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool
