Bug Broth with Cricket Powder

The recipe for this savoury broth comes to us from Brian Norrish, @orosous,  sous chef at Oro Restaurant in Toronto, Ontario. The broth is made with the nutritional goodness of cricket powder, and packs in protein, B12, calcium, iron, and a ton of other nutrients. This broth is the perfect base for a rich french onion soup.

Ingredients

1 L cold water

1 medium carrot peeled and chopped

1 stalk celery chopped

1/2 med onion chopped

2 sprigs of parsley

3 cloves garlic

3 tsp (30 g) of cricket powder

Directions

Since the crickets have been dried and pulverized into powder you don’t need as much as you would think. Just combine all the ingredients together in a pot and bring to a bare simmer and keep it there for about an hour. Strain your broth through a coffee filter and either freeze for future use or cool while you are preparing the rest of your recipe. This broth has a flavour reminiscent of a shiitake mushroom broth so it would work well with any recipe that called for a mushroom stock.
