Banana Pecan Oat Cricket Bake

  • 1/2 cup pecans, chopped
  • 1 cup mashed ripe banana (~2 large)
  • 3/4 cup almond beverage (or desired milk)
  • 2 eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 2 cups rolled oats
  • 3 tbsp hemp hearts
  • 2 tbsp cricket powder
  • 1 tablespoon cinnamon
  • 1/4 tsp salt


•Preheat oven to 350F. 

•Spread pecans on baking sheet and toast 4-6 min until fragrant. Set aside. 

•Grease or spray 8” square baking dish

•Mix mashed banana, almond milk, eggs, maple syrup, vanilla, and coconut oil. Beat until smooth. 

•In a large bowl mix oats, hemp hearts, cricket, cinnamon, and salt. 

•Stir wet mixture into oat mix. Add pecans. 

•Pour into baking dish and bake ~25 min, until set and golden. Cool in dish at least 10min before serving.
